Ingredients:

  • 2 cups fresh mushrooms, sliced (such as cremini or button mushrooms)
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely chopped (optional)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dark soya sauce
  • 1 cup vegetable broth
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare and Sauté Mushrooms: Clean the mushrooms thoroughly and slice them into even pieces. In a large skillet or saucepan, add 2 tablespoons of oil over medium heat. Add the sliced mushrooms and sauté until golden brown and tender, around 5-7 minutes. Stir occasionally.
  2. Add Garlic and Onion: Once the mushrooms are cooked, add minced garlic and chopped onion to the skillet. Cook for an additional 2-3 minutes until the onion becomes translucent and fragrant. Scoop the mushroom mixture into a bowl.
  3. Butter and Flour: In the same saucepan, melt 2 tablespoons of butter. Sprinkle the tablespoon of all-purpose flour over the same pan. Stir continuously for about a minute to cook the flour.
  4. Broth: Gradually pour in the vegetable broth and dark soya sauce while stirring constantly to combine the ingredients. Add the mushroom mixture back into the pan.
  5. Simmer and Season: Let the sauce simmer for 5-7 minutes on low heat to thicken. Season with salt and pepper to taste. Adjust the seasoning according to your preference. Remove from heat and set the mushroom sauce aside.

Assembling:

  1. Top with Mushroom Sauce: Ladle the warm mushroom sauce over the mashed potatoes or grilled meat, covering them entirely or serving it on the side, as per your preference.
