Continuing from our series, we’re thrilled to present this tantalizing dish that will grace your holiday table with indulgence and delight:

Ingredients:

  • 4-5 packs of Confit-Duck & Co’s Creamy Mashed Potatoes
  • 150g / 1 1/2 cups Cheddar

For the Gratin:

  • 750g / 1.6lb Russet Potatoes
  • 2 tbsp / 30g Butter, melted
  • 1 large clove of Garlic, finely grated/minced
  • 1/4 – 1/2 tsp Salt, or to taste
  • 1/8 – 1/4 tsp Black Pepper, or to taste
  • 40g / 1.4oz Parmesan (preferably fresh dusty variety)
  • Finely diced Fresh Chives, to garnish

Method:

  1. Prepare the Mash: Heat and mash the packs of creamy mashed potatoes with Cheddar. Season to taste and spoon into a baking dish, leveling it off.
  2. Preheat the Oven: Set the oven to 200C/400F.
  3. Prepare the Gratin: Peel and thinly slice the russet potatoes. Combine melted butter, garlic, salt, and pepper in a bowl. Toss the potato slices in this mixture, coating them evenly along with half of the parmesan.
  4. Layer and Bake: Arrange the sliced potatoes on top of the mashed potato base in rows, slightly angled. Cover with foil and bake for 20 mins. Remove foil, sprinkle remaining parmesan, and bake for another 40 mins until golden and crisp.
  5. Rest and Serve: Allow the dish to rest for 15-20 minutes before serving to retain its shape and ensure the potatoes are perfectly cooked.
